We asked our team what some of their favorite recipes were and we want to share them with you! What else have you been making with items you’re finding in your pantry?
Breakfasts:
Sweet Potato & Black Bean Breakfast Burritos Kristen loves this breakfast burrito recipe as a starting point for a really delicious and filling meal. It’s great for meal preps, so Kristen uses this with a lot of postpartum clients. It’s great because you can get creative with your preferred seasonings (cumin or paprika for a savory, or some cinnamon and all spice for a sweeter note). You can swap the spinach for some lightly sautéed kale, which tends to be less watery and holds up well in the freezer, just chop it really small. If you’re not strict vegan feel free to add shredded chicken, cooked bacon, or ground breakfast sausage for even more protein.
Blueberry Lemon French Toast Casserole This is great for a weekend brunch at home, just plan ahead the night before to put it together. The blueberry and lemon together make for a really refreshing treat as spring approaches. You can choose a gluten-free bread if that fits your needs. If you are a smaller family you could either cut this recipe down to a smaller size or prepare it into 2 smaller baking dishes and put one in the freezer for another weekend. Kristen recently made this and skipped the topping (just added extra lemon zest when serving) and her whole family loved it.
Apple and Cinnamon Oatmeal Alyssa loves this electric pressure cooker oatmeal recipes. Enjoy this warm breakfast without the hassle!
Lunch & Dinner Meals:
Spicy Honey Mustard Pretzel Chicken Fingers Heather is currently pregnant and loving this spicy and sweet option! Half Baked Harvest (this blog) is one of her go to places for delicious recipes.
Chicken Tikka Masala This is a flavorful, easy, one dish meal that you can serve with quinoa, rice, or cauliflower rice depending on your preferences. You can adjust the flavors to your liking.
Sweet Potato Shepherds Pie Shara whips up this hearty one dish meal for her family often and her family loves it (they substitute the green peppers and mushrooms with green beans to appeal the kids flavor palate, that’s the beauty with something like a shepherds pie – you can alter it to use up produce you already have or something like. Time saving tip: if you have an electric pressure cooker, you can cook the sweet potatoes in it to save some time.
Spicy Instant Pot Taco Soup This is a go to soup for Sierra because it is super hearty and nourishing. It uses simple, inexpensive ingredients, and easy to throw together. It’s also yummy!
Egg Roll in a Bowl If you love ginger you will love this easy one skillet meal! Kristen makes something like this often, substituting what we need to depending on what we have on hand. One great swap is also using coconut aminos in place of soy sauce, it’s a little sweeter often more allergy friendly.
Sweet Treats:
Coconut Citrus Energy Bites. Kristen loves to makes these (or something very similar) for postpartum clients. They make a great treat to grab a bite to have something sweet and substantial. The kids love it too. You can modify the nut butter to something that works best for you.
Make Ahead “Breakfast” Cookies Kristen’s postpartum clients love these cookies because they are easy to make, there’s a lot of variety and they are great to grab for a quick bite.
Lemon Poppyseed Cookies These gluten free cookies are a refreshing sweet treat. These are easy to mix up!
Here is Sharon’s favorite pregnancy, labor and postpartum snack. It is very easy to make and her clients love them!
Energy Bites
- 1 cup raw oatmeal
- 2/3 cup coconut
- ½ cup peanut butter
- ½ cup ground flax seed
- ½ cup chocolate chips or dried fruit (Optional)
- 1/3 cup honey or maple syrup
Pulse oatmeal in food processor or blender until fine. Mix all ingredients together. Chill 30 minutes. Roll into one inch balls, and store in air tight container in the refrigerator or freezer.
